Another great recipe from Chloe & Craig Barlow. Chloe loves to convert her friends and family to Keto and her desserts are usually the thing that does it! Try this one for size, serves 6.
“This is a real crowd pleaser and just over 3g Net carb. The great thing with this pudding is that the sweetener is optional.”
- 100g dark chocolate (at least 85% cocoa solids)
- 2/3 cup of cream
- Orange zest
- 3 tsp sweetener (optional)
- 4 egg yolks.
- 1 cup cream
Break or chop the chocolate in to very small pieces in a heatproof bowl.
In a small saucepan heat 2/3 cup double cream with the orange zest and sweetener if you’re using it. When the cream is just boiling, take it off the heat.
One at at time, whisk the egg yolks in to the warm cream mixture until they are incorporated to a custard.
Pour the custard mix through a sieve on to the broken chocolate and cover with a plate for 5 minutes, mix to combine to a smooth mix and let cool.
In a clean bowl whisk 1 cup of cream until semi whipped.
Fold to combine the whipped cream and chocolate orange mixture.
Divide the mixture between 6 pots and chill for at least 2 hours or until set.
